1 pd. ground sirloin shred
1 head iceberg lettuce
1 med. brick chili
1 doz. corn tortillas
1/2 cup shredded cheddar cheese
1 large russet potato (shredded)
2-4oz.cans sliced olives
2 large onions
(chopped)
1 bunch cilantro (chopped)
4 large tomatoes
(chopped)
1 cup vegetable oil
1 large can refried beans
Salt /pepper to taste
Brown the Sirloin with half of the
onions and shredded potato.
When meat starts to brown, add the
brick chili.
Cook until chili dissolves and potato
is tender.
- Mix together chopped tomatoes, remaining onion, both
cheeses,
lettuce, olives and cilantro in large bowl.
- Deep fry the corn tortillas, frying them to your
desired crispness.
- A little salt added to the shell during frying,
enhances the taste.
- Drain the shells on a paper towel.
- Spoon the meat mixture into the shell.
- Add a spoonful of refried beans
